SUMMARY:Aviation Gin
DESCRIPTION:Like the world’s finest gins\, Aviation is distilled using a proprietary maceration recipe that produces a pure medley of botanical flavor. It all starts with our precise blend of botanicals – cardamom\, coriander\, French lavender\, anise seed\, sarsaparilla\, juniper\, and two kinds of orange peel. The botanicals are suspended in a neutral grain spirit for 18 hours in macerating tanks. The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate\, the vapors go into the condenser\, which cools the vapors to form the gin distillate. \nIn a meticulously monitored process\, the first fluid leaving the still\, the “heads\,” is removed. Collecting the “heart of the spirit” throughout the run\, the distillers then determine the end of the cycle and make the final cut\, “the tails.” This process takes approximately 7 hours and at this point\, the “heart cut” is 142 proof. The “heart cut” is transferred to a blending tank where pure water is added\, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling\, capping\, and labeling. Aviation is then packed into boxes and ready to ship.

Nobody knows where he came from\, how he lost two fingers\, or where he died. But his legend still lives on today in Lodi\, California. Lodi sits at the foothills of California Gold Country\, 75 miles east of San Francisco. Its hot days are cooled by breezes from a vast river delta\, and it’s home to sandy soils that force vines to dig deep into the ground. Pioneers knew that Lodi made superb wine country; so they planted vines here more than a century ago. \nThe gold in California’s hills may be mostly gone\, but Three Finger Jack’s immensely structured Lodi wines carry the legend of Jack’s relentless quest for treasure. Jack sought riches he could carry with him\, but for us\, the riches are Lodi’s incredible old vines and the unique soils underfoot. Lodi is different and so are its wines. DESCRIPTION:We pride ourselves in striving to make Código 1530 the most selective tequila in the world\, using only perfect inputs and age old secret family processes. \nWe hand select the best\, fully-matured agave\, to ensure that with each harvest\, our agave’s Brix level (sugar content) meets our high standards\, for a better tasting\, smooth tequila. We make each batch naturally\, without any added sweeteners or colors. \nEach drop of Amatitán water we use is from freshwater pools and rainwater\, filtered through the volcanic soil of Los Bajos. \nOur proprietary chopper allows us to extract only the best juice and pulp from the first press of ripe agave\, to garner the purest flavor. \nWe use local yeast to facilitate the proper fermentation process. \nWe use the finest Napa Valley Cabernet French White Oak wine barrels in our time-honored family aging technique\, rather than the more commonly used American whiskey barrels.
